Bridal Shower Food : Egg 'n Anchovies
Ingredients
- Thinly sliced bread
- Butter (at room temperature makes it easier to spread)
- To Fill
- Hard boiled eggs
- Mayonnaise
- softened butter
- anchovies filleted
- Salt and pepper for seasoning
- Finely chopped parsley
Procedure
As a guide for every two hard boiled eggs use three teaspoons of
mayonnaise, half a teaspoon of butter and 4 anchovies.
When the eggs have cooled, peel them and put them in a bowl. Then
mash them up with the mayonnaise, the butter, the anchovies, the
finely chopped parsley and then season with salt and pepper. Next
cut the crusts off the bread and butter the bread.
Spread the mixture on to one slice of the buttered bread and then
top with another slice of buttered bread.
Now cut the sandwich into four neat triangles
Note:
- If you prefer, you can use anchovy paste instead of canned
anchovies you will need approximately two teaspoons of anchovy paste
for every two hard boiled eggs.
- Always cover sandwiches until they’re needed to prevent
them from drying out.
