Eggmay Sandwiches Ah, bridal shower food! It is a plethora of dishes appealing to a collection of myriad carpal sensibilities. It is for this very reason that bridal showers also serve as mini buffets offering multiple choices to the average bridal shower partygoer, for him or her to make his or her own rosy picks from the batch.

It is for this very reason that sandwich boards and smorgasbords (which is Swedish for assigned vegetable tables) have risen in popularity at bridal shower parties. These tables mainly aim at letting the bridal shower guests put together their own sandwiches from the assortment of sliced, diced, and shredded vegetables provided separately in trays on the table.
Along with these trays, it is absolutely necessary to provide dips of different flavors on the tables. Here we take a look at one such dip recipe – egg mayonnaise, fondly referred to as egg mayo or eggmay dip. For your added convenience, we even expand a little bit and talk about preparing eggmay sandwiches.

Let us jump in immediately then and have a look at the stupendously easy way of preparing eggmay sandwiches. We begin with the ingredients:-

  • Sliced Bread (like obviously)
  • Eggs (hard boiled)
  • Mayonnaise
  • Butter
  • Salt and Pepper
  • Spring onions/ vinegar/ dried mustard (all optional)
  • Chives

Moving on to the actual procedure -

Procedure

For the egg mayo dip

Here is a handy dandy guide regarding the amount of ingredients to use for the egg mayo dip just for your reference sakes:-

Say you are using four hard boiled eggs, then the rest of the dip ingredients in proportion to the eggs should be:-

Six teaspoons of mayonnaise

One teaspoon of butter

(Note: When it comes to the butter, it would be better if you did not use refrigerated butter after immediately removing it from the fridge. Leave the butter outside, near a warm microwave perhaps, for about fifteen to twenty minutes till it begins to melt or at the least, reaches room temperature. This is done so that you can spread the butter across the bread with great ease. Otherwise you end up with frozen butter chunks in your sandwich).

About six teaspoons of chives (neatly and evenly snipped)

Chives provide a crazy flavor which brings something else altogether to the egg mayo dip. The taste of chives is not as strong as that of full-fledged onions. They are much more subtle and happen to be ideal attendants for the sacred union of eggs and mayonnaise.

Other than chives, vinegar and dried mustard also make for good egg mayo seasoning. Sprinkling fried spring onion bits on the egg mayo also makes for a cool alternative to seasoning of the dip with chives.

Wait for the eggs to cool. Then, start peeling off the softened shells off them and place them in a mixing bowl, along with all the other recipes- the mayonnaise, the previously softened butter, the snipped chives and of course, salt and pepper. Shake the mixture till you get a smooth dip.

Now pour your yummy egg mayo dip into your prettiest glassware and place it in a prominent position on your smorgasbord. For presentation, you could place fancily carved carrot slices (in the shapes of the usual- serrated edge, roses, swans etc.) on four ends of the egg mayo dip bowl.

Procedure for eggmay sandwiches

Note: Even though we are providing you with a guide on preparing egg mayo sandwiches, we strongly suggest you just go with the dip for your bridal shower and provide breads to the shower guests separately. However, you could use these tips on sandwich making and bread toasting for your own, non bridal shower uses later on.

Next, cut the crusts and corners of the sliced bread.

Start buttering the white/ brown portion of the bread.

Once you are finished with the buttering, spread the egg mayo dip on one side of the sliced bread. Prepare a double decker egg mayo sandwich using three such slices (with the sides having the spread squished against each other for the bottom two slices. The third slice should have its spread side squished against the other side of the middle slice).

You have the option of cutting the sandwiches into smaller pieces with a knife- either properly cut rectangles or triangles (or you could leave it just as it is if you find the size of the rectangles and triangles to be too miniscule).

Note (for both recipes):

  • Once you are done with your sandwiches, always make it a point to cover them. You may prepare the food with the greatest of care and hygiene, but it would be terrible to have them go stale as a result of keeping them uncovered for a long time.
  • When it comes to slicing your chives, please do not use a chopping knife. Instead, go for kitchen scissor and snip them into little pieces. Chives are too tiny to be chopped and tend to stick to the chopping board and chopping knife. You would be wasting a great amount of a fine herb for no reason whatsoever, so please don’t do it!

Tada! Wasn’t preparing egg mayo dip ridiculously simple? And it makes for quiet the addictive appetizer. For such less amount of effort, the bridal shower guests sure reward you quite a bit with their appreciation. They just won’t get enough of it and will keep returning to the vegetable table to finish off the dip till the last drop.
