Chicken Liver Pate

Chicken Liver Pate Planning your bridal shower food menu can turn out to be a gigantic pain in the royal behind. Plain and simple! There are just so many dishes to take care of, you get so befuddled and fall into depression bouts just preparing all of the assorted dishes. The biggest headaches usually tend to be the main course dishes where you just have no clue how many meat based dishes to include and how many to exclude.

The ideal number of meat dishes to include would be half of the total of your appetizer and main course dishes. For example, if you have six appetizers and six main course dishes, for a total of twelve, (not counting your desserts), then you may include six non vegetarian dishes on your menu, including soups. This way, there will be a good variety for meat eaters as well as there being the perfect amount of choice for the benefit of your guests who are the strictest and staunchest of vegetarians.

Speaking of non vegetarian bridal shower dishes, my favorite one, incidentally, happens to be none other than chicken liver pate. Even amongst meat eaters, there are some who do not go for something extremely heavy like beef, pork and red meat so chicken liver is just the right thing for people of such taste.

Chicken liver pate recipe

Here you will find a step by step recipe for chicken liver. Let us start with the ingredients:-

Ingredients

  • Butter (not more than quarter of a cup)
  • Chicken livers (less than a pound, not more otherwise they will go to waste) (fresh off the poultry)
  • Chopped onion
  • Two eggs (boiled hard much in advance)
  • Grounded pepper- either black or white, depending on your disposition
  • Cognac
  • A touch of herbs like nutmeg, thyme, basil and clove
  • Salt and pepper
  • A little bit of Tabasco sauce to give the recipe the zingy flavor

Procedure

Note: If you want the best results, it is essential that you use fresh chicken liver fresh out of the poultry shop. You need to thoroughly wash and rinse the chicken liver slab and trim off any green molding or white sinewy substances off the meat. If you do not want to run the risk of food poisoning your entire bridal shower guest list, doing so is highly important. Use a knife with a sharp edge for the deed.

Next, take the quarter cup of butter and melt it on a frying pan.

Toss in half a pound of chicken liver and finely chopped onion into the pan.

Turning the added liver and onions frequently, fry the mixture as gently as possible. Do so till the chicken livers are well and truly prepared in a thorough fashion (the best way of making sure is to check if the outside of the liver has turned to a crisp brown while the inside should transform into a very light red or a rosy pink).

Next, start the seasoning. You may add in drops of cognac and then use a variety of condiments- everything from white grounded pepper to regular salt and pepper would do.

But what would give the chicken liver pate dish that “over the edge” flavor which would pull a number on the taste buds is seasoning the liver with a nourishing herbal mixture (which has been grounded well in advance). You could go for a very Indo taste with basil or nutmeg or throw in everything from cinnamon and thyme. Just make sure that you do not exceed much more than half tablespoons for each of these herbs while grinding them together in your mortar and pestle. You could prepare the herbal mixture well in advance of the bridal shower, even before a month or so, and have it stored in an air tight container.

You could even throw cloves into the mix. Beware the domination of clove taste though! Apply it at your own risk.

Tip: To reduce the overpowering taste, maybe you could cut the clove in half?

Send the newly seasoned chicken liver and onions to a blender or an electric mixer.

Last but not the least, add in the eggs along with the Tabasco sauce and the puree until the result is extremely smooth.

Serving the chicken liver pate

You may prove your creativity while serving the liver pate. Pour the pate into a dish which is as shallow as they come. You may use the pate as an attractive centerpiece on a side table. All around the pate dish you could display different bread baskets containing canapés, crackers, garlic bread, submarine buns, white bread, brown bread or crusty bread.

If someone on the organizing team is good at carving vegetables then you could have them cut out tomato roses, serrated carrot slices, or radish and beet root swans. Have these carvings float in the middle of the pate. You could also sprinkle in brioche sprigs on the pate to give the usually bland looking pate a decorative look.
