Ingredients
- Cherry tomatoes (quantity depends on the number of filled tomatoes you want to serve to your guests)
- Parmesan Cheese
- Black pepper (nicely grounded)
- Salt (for seasoning)
- Pine nuts (finely crushed)
- Garlic
- Mint leaves (for added flavoring)
- Brioche sprigs (for decoration purposes)
- Virgin olive oil
Procedure
Washing and hollowing out the cherry tomatoes
Wash the cherry tomatoes thoroughly.
Once they are all cleaned up and dried with a nice kitchen cloth, you may begin to neatly chop a slice from the top (stalk or pip end of the tomato).
Next, start hollowing out the tomato. First, extract the seeds. Then have the flesh removed.
Preparing the filling
Break a clove of garlic and mix it with the pine nuts in a mortar.
