Potted Beef Recipe

Potted beef is ideal for canapés; these are small sandwiches, crackers, and slices of bread or toast, which are cut into different shapes with a knife or cookie cutter.

Potted Beef 1

Ingredients

  • Butter 3 oz
  • Half a bay leaf
  • Cubed chuck steak 1 oz
  • Salt
  • A garlic clove
  • Peppercorns 6
  • Water or stock
  • Pepper
Procedure
  • Cook the steak, half bay leaf and peppercorns seasoned with salt and pepper in a casserole at 275°F until it becomes tenderAfter cooling, drain it
  • Put butter and half of the stock into a blender and purée until it becomes smooth
  • Put the other hald and add garlic
  • Purée until it reaches required consistency adding stock as needed

    Ingredients

    • Freshly ground black pepper 1/4 tsp
    • Unsalted sliced butter 110 gm
    • Anchovy essence 1 tbsp
    • Stewed beef steaks 450 gm vFreshly grated nutmeg 1/4 tsp
    • Salt according to the requirement
    Procedure
    • Set the oven temperature to 140°C
    • Remove all the sinews from the meat and make chunks
    • Place in a dish with an air-tight cover
    • Add the pepper, nutmeg and then the anchovy essence
    • Spread the butter over the top. Cook for at least 5 hours, until the meat is extra soft
    • Cool slightly after cooking and then place in a food processor until it becomes smooth and light. Add salt if necessary as the anchovy essence contains some
    • Pack into pots and cover with film
    • Store in the fridge for a day or two

    Ingredients

    • Beef stew meat (cut into pieces)
    • Paprika
    • utter
    • Powdered black pepper
    • Salt
    • Powdered nutmeg
    Procedure
    • Boil the beef in water for about 2 to 3 hours
    • Replace the water as per requirement
    • Make a thick paste in a grinder
    • Filter the melted butter through a cheesecloth
    • Add it in the cooked meat
    • Add paprika, pepper, salt and nutmeg according to the taste vRefrigerate till it is time to serve
    English Potted Beef

    Ingredients

    • Fat less steak 500 gm
    • Salt & freshly ground black pepper
    • Red wine 3 cups
    • Butter 60 gm
    • Clarified butter
    • Powdered mace and powdered clove
    Procedure
    • Remove all sinew and cut it into cubes and put into a stone jar
    • Season the meat with salt and the spices
    • Cover with the wine
    • Cover the jar with foil and keep it into boiling water
    • Cook at 170 degrees up to 4 hours
    • Drain the juice when the meat is ready and reduce until you have only a couple of spoons
    • Put into a blender and beat in the softened butter and the reduced juices
    • Fill into little pots
    • Put a layer of clarified butter
