Apple Walnut Scones
Ingredients for Apple Walnut Scones
- 3 cups all-purpose flour
- 1/3 cup sugar
- 1 table spoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- ¾ cup butter
- 2 tablespoons sugar with ½ teaspoon cinnamon
- 1/4 t. grated nutmeg
- grated lemon zest
- 1 chopped apple
- 1/2 cup chopped walnuts
- 1 cup buttermilk
Method
- Preheat the oven to 400 degrees
- Mix the sugar, flour, baking soda, baking powder, salt, lemon zest and nutmeg powder in a bowl Add butter in the mixture and blend well
- Add the chopped apples and walnuts in the mixture. Pour the buttermilk knead dough consistent enough to be able to cut into pieces.
- Cut the dough into small shapes you want and sprinkle the cinnamon sugar mixture on the top
- Place the pieces on a greased baking sheet and bake for about 20 minutes. Top it with glaze.
Glaze :-
- 1/4 cup brown sugar,
- 1/4 cup sweetened condensed milk
- 1 cup castor sugar
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Procedure
Take a saucepan and add brown sugar and condensed milk in it. Stir it well and let it cook on medium heat. Once the mixture simmers reduce the heat and add butter. Cook and stir till the butter melts. Pour it in a bowl and add the vanilla extract and castor sugar. Spread this on the scones and they are ready to eat.
You can make apple walnut scones in many other ways. You can make muffin like scones. It is fine to experiment as long as you know what you are doing. You can make extremely healthy scones especially if you are health conscious. Even if you are not, it is good to eat healthy food. You can make these scones in such a way that you would be able to eat these everyday for breakfast, have them with a cup of tea or coffee, or carry these to work. If you want to eat them everyday, they should be essentially healthy.
Ingredients for healthy apple walnut scones
- 1 cup Whole wheat
- ½ cup Grated coconut
- 1/4th cup sugar or sweetener
- 1 apple grated
- ½ cup finely chopped walnuts
- 2 tablespoon Greek yoghurt
- 1/4th cup Maple syrup
- 2 table spoons water
- 1/4th cup cooking oil
- 1 table spoon crushed cinnamon
- ½ teaspoon nutmeg powder
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon pure vanilla extract
- A pinch of salt
Method
- Mix the whole wheat, salt, sweetener, baking soda, baking powder well
- Add vanilla extract, maple syrup, nutmeg powder, grated apple, coconut, cinnamon powder and mix well
- Add the yoghurt and oil. Make dough and roll it gently.
- Add some water to moisten it. Knead the dough well.
- Cut the dough into small pieces of about 1-2 inches. The dough would be slightly soft but with crunches of walnuts.
- Preheat the oven at 400 degrees
- Take these pieces on a greased baking sheet and bake for 15-18 minutes.
- The scones are ready to eat. You need not put any glaze or icing. Simply have them as a coffee snack.
You can cook them on a weekend and refrigerate them for the coming week. Consume them throughout the week. These are absolutely healthy and good enough to eat everyday
- Firstly we have used whole wheat instead of the regular flour
- You can omit the sugar and add sweetener. There is no glaze or icing required
- Apple, walnuts and coconut have a good nutritional value
- There is no butter, we have added yoghurt which is absolutely healthy
If you have some occasion or have kids at home, you can serve these with marmalade, jams, etc. You can make a caramel like dressing of brown sugar and pour it on the top of the scone. Of course, this could be done occasionally.
One more method
- You can make these in an even simpler way
- Take some flour in a bowl and add some butter. Rub the flour with your hand to make sure the flour blends well with butter.
- You can mix, finely chopped apple, chopped walnuts, and sugar in the flour and knead dough
- Add some milk instead of water in the mixture and form the dough. Knead the dough well enough to be able to cut pieces.
- Preheat the oven to 220 degrees. Grease the baking sheet and arrange the scone pieces.
- Sprinkle some brown sugar on the top of the scones. Bake them for 12-15 minutes.
- Your scones are ready to eat.
Some tips for healthier and lighter scones
- If you are using milk, use low fat milk
- Do not keep the batter dry. Add some milk or water.
- You can add two eggs to the batter and beat the batter well. This would make it softer and lighter.
- Use unsalted butter
This is an amazing recipe for a bridal shower. You can have it at any time of the day. However, it is best to have this scone for breakfast or brunch. Hence, if your bridal shower is scheduled in the early or late morning, you can very well include this recipe.
