Chicken Puffs Sandwiches

Chicken Puffs Sandwiches Sandwiches are always a preferred option for bridal showers or even for the smallest occasions. This is because most people like sandwiches. They are relatively easy to make and you can make them a healthy food option. Also, you can do various permutations and combinations with the filling in the sandwich. You can serve them as a tea time snack as well as during breakfast or brunch. Hence, even if the bridal shower is scheduled in morning or afternoon it does not matter as far as sandwiches are concerned.

You can give your health conscious guests various options for healthy eating by making a variety of fillings with a high nutritional value. You could mix all the veggies or you could mix chicken pieces with veggies. This recipe has a filling of chicken pieces, green onions, almonds and celery.

Ingredients

  • 3/4 cup chopped celery
  • Chicken breast
  • 1/4 cup chopped green onion
  • 1/4 cup chopped almonds (optional)
  • 1/2 cup mayonnaise
  • 2 to 3 dashes of Tabasco Sauce
  • salt and pepper

Method :-

Cook the chicken and cut it into small pieces. Add the celery and spring onions and mix it well. Add the almonds, salt, mayonnaise, pepper, Tabasco sauce and mix well. Refrigerate this mixture until you want to apply it on the puffs or sandwiches.

Ingredients for Puffs :-

  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 4 eggs

Method :-

Take a saucepan and add water and butter in it. Let this boil. After it boils, add the flour and stir well. Keep this on low heat for about a minute. Let it cool. Break the eggs and beat them well and add them in the mixture. Blend it well. Preheat the oven at 400 degrees. Take this mixture on a greased baking sheet and bake for about 15 minutes until it puffs. Let it cool. You can refrigerate these until you want to use it.

You can make the puffs in advance and use these for various fillings of sandwiches. There are many other fillings you could use. Some of these are-

Ingredients for filling chicken puff sandwich-

  • 1 Chicken breast
  • Flat leaf parsley
  • Lemon zest
  • Baby spinach
  • Olive oil
  • Parmesan cheese
  • Pinch of salt

Method :-

  • Cook the chicken. Apply some salt on one side of the chicken.
  • Cut the parsley into uneven pieces and top it up on the chicken. Top that with some lemon zest.
  • Shred a layer of parmesan cheese on it
  • Wrap the chicken with plastic wrap. Pound the chicken until it becomes slightly thin.
  • Take a pan and heat some olive oil in it.
  • Remove the plastic wrap and add the chicken in the pan. The layered side should be down.
  • Season the upper side of the chicken with salt. Cook for about 4 to 5 minutes.
  • Take the puffed bread and spread a leaf of spinach on it. Add the chicken filling in slices and cover it with another puff on the top.
  • Your chicken puff sandwich is ready to eat

Bacon and chicken filling for a puff sandwich :-

  • Boiled eggs
  • Bacon
  • Chicken breast
  • Tomatoes
  • Lettuce leaves
  • Mayonnaise

Method :-

  • Cook the chicken breast. Let it cool and then slice it into small layers.
  • Cut the boiled eggs into small pieces. Mix mayonnaise in this.
  • Apply this mixture on one side of the puff
  • Grill some bacon and let it cool. When cooled add a layer on the mayonnaise and egg.
  • Add some pieces of tomato over these couple of layers and cover it with a lettuce leaf
  • Cover this with another puff and your puff sandwich is ready.

These are relatively healthier alternatives to eating red meat, butter or other fatty foods. These fillings when added in the sandwiches are also very tasty and most of your guests would love your puff sandwiches. These can also be added in normal sandwiches without being puffed. You can simply have one of these fillings layered in a whole wheat bread. Grilling this in a toaster is also a good option.
