Leek and Bacon Knots Muffins

Leek and Bacon Knots Muffins Bridal showers are a good occasion to make nice, healthy snacks instead of a whole meal. Muffins, cookies, sandwiches, etc., are always the most preferred option. Leek and bacon muffins are absolutely yummy and your guests would surely love it.

Ingredients

  • 1 leek
  • 1/4 cup butter
  • 2 cups Whole wheat flour
  • Chopped bacon
  • salt
  • 1 teaspoon sugar
  • 1 egg
  • Sesame seeds
  • ¾ cup warm water
  • 2/3 cup milk

Procedure

  • Chop the leeks into big slender pieces. Chop the bacon. Into long slender pieces. Take some butter in a pan and let it melt. Add the leeks and stir fry. Remove these in a bowl and let it cool. Now cook the bacon and let it be crisp.
  • Take a bowl and add yeast, salt, sugar and water in it. Take another bowl and add wheat flour, salt and butter in it. Mix it well. Add the cooked bacon and leeks into it. Add the mixture of yeast and water to it. Blend this well enough to be able to knead dough. Place this dough in a greased bowl.
  • Take two greased baking sheets. Cut the dough in medium sized pieces and roll them into long pieces of 10-12 inches. Tie a knot of these pieces. Place them on the baking sheet.
  • Preheat oven to 425 degrees. Break the egg and beat it well. Brush the beaten egg on these tied rolls and sprinkle some sesame seeds on the top. This would add glaze to it. Bake this for about 15 minutes. Once these are baked let them cool.
  • Your bacon and leek knots are ready to eat

Another way to use bacon and leeks is to make muffins. These are also a good option for a bridal shower menu. The ingredients for bacon and leek muffins are-

  • A can of Bacons
  • Washed and dried Leeks
  • 1 table spoon Olive oil
  • 2 cups flour
  • 2 table spoon castor sugar
  • Cheddar cheese
  • ¼ cup sour cream
  • ½ cup milk
  • 2 eggs
  • 1 teaspoon baking powder

Method

  • Preheat the oven to 250 degrees. Chop the bacons and leek. Grate some cheese. Break the eggs and beat them well.
  • Take a bowl, add flour, baking powder and cheese in it. Blend it well.
  • Take a pan and add some olive oil. Add the bacon and leek pieces and let them cook over medium heat. Stir in between. The bacon would become crisp whereas the leek would soften. Drain it and allow it to cool.
  • Add the leeks and bacon in the cheese and flour mixture. Blend well.
  • Add milk, sour cream, oil and beaten eggs in a bowl. Blend well. Add this to the leek, bacon and flour mixture and mix well.
  • Take a greased muffin mould for baking this mixture. Add this batter into the moulds. Bake for about 10 minutes. Make sure it is baked well from within. You can insert a skewer inside the baked muffin and check this.
  • Put the baking mould on the wire rack and let the muffins cool. You can serve them when they are warm.

This muffins look like tiny golden fried balls although they are baked. These are absolutely delicious and most of your guests would love them. This way, you can add or modify ingredients to suit your own taste. Instead of just bacon and leek we have also added cheese. You can be creative enough and try adding some other ingredients or veggies.

You can give your muffins a caramelized brown look. There is one more interesting recipe to make these muffins. The ingredients are-

  • Smoked bacon
  • Leeks
  • Garlic
  • Salt
  • Olive oil
  • Black pepper
  • Mozzarella cheese
  • Pie crust dough or homemade mini sized pizza base

Method

  • Preheat the oven to 350 degrees
  • Chop the garlic pieces and season them with salt and pepper. Coat these with olive oil. Wrap these pieces an aluminum foil and bake for about an hour till they are soft. Later, squeeze out all the garlic flesh.
  • Slice the bacons and sauté them in a pan on medium heat until they become crisp.
  • Wash the leeks in cold water and remove the green part. Drain and dry them well.
  • Add these leeks in the cooked bacon. Add salt and pepper to this. Let it cook for about 20 minutes.
  • Take a baking mould for muffins. Take a pie or pizza dough and form a base in the muffin mould. Press it well enough and make sure it covers the mould to form crust after it is baked.
  • Add the garlic paste in this and then add the muffin and bacon mixture in each mould. Top it with mozzarella cheese. Bake for about 12 minutes.
  • Remove from the oven and let them cool a bit. Serve them warm.
