Mini Quiche Sandwich
Bridal showers nowadays are all about informal get togethers and fun. It is an opportunity of the bride to chill out and wipe off all the stress that comes with wedding planning. A good, healthy and casual menu is a must for such an informal and enjoyable occasion. Snacks and finger food are gaining popularity these days more than a full meal menu. They nicely add to the casual tone of the bridal shower.
Any kind of sandwiches or bakery products is the most common menu. Mini quiche sandwiches are an amazing option for breakfast or brunch. You could also serve them along with tea or coffee in the afternoon. If it is a tea party in the afternoon, you could serve a quiche recipe, some cookies and tea. If you have arranged breakfast or brunch, you can serve quiches along with a variety of sandwiches, fresh fruit juices, pastries and couple of more snacks.
Quiches is basically a French word. The English pronunciation is "keesh". Quiche is a rural French concept wherein you have a baked crust surrounding a pie of vegetables, cheese or meat mostly made in custard and then baked within the crust. Hence, it is not a conventional sandwich.
There are many ways in which you can make a quiche sandwich. You can add or modify the ingredients you bake inside the crust. You could have a combination of meat and vegetables along with cheese or simply veggies and cheese.
Most quiches can be prepared in advance and stored in the refrigerator in an airtight container. You could make the quiche with flour or get wantons from the market and bake them. Traditionally you wither steam the wantons or deep fry them. However, in this case you need to bake the wantons to make them look like the outer golden crusts. Hence, a quiche almost resembles a mini pizza, except that here the sides are also baked and crusty whereas in a pizza only the base is crusty. Here are some of the recipes for quiche sandwich-
Ingredients
- 1 Pack wonton wrappers
- 4 eggs
- 1/4 pounds ham
- whipped cream
- salt
- 1 pack frozen broccoli
Procedure
- Preheat the oven at 350 degrees. Take the whipped cream in a bowl. Mix beaten eggs and salt. Blend well.
- Take a muffin baking tray and grease it. Place a wonton wrapper in each mould.
- Chop the broccoli and dice the ham well. Mix the broccoli and ham together in a bowl. Place a big teaspoonful this mixture on the top of the wonton and add some quiche mixture to it.
- Add cheese. Bake for about 15 minutes. The wonton edges should become brown and the egg should set.
- Mini quiche sandwiches are ready.

Ingredients for the outer crust and base-
- Readily available short crust pastry
- 1 egg
Method
- Preheat the oven to 350 degrees. Break the egg in a bowl and beat it well.
- Roll the pastry up to about 10 inches. Prick it all over with a fork.
- Place a grease proof paper in the pastry. Fill some rice grains in it.
- Bake this for about 20 minutes. Once this is baked remove the greaseproof paper along with rice.
- Fill the baked pastry with the beaten egg and spread it across evenly. Bake this again till the egg is set.
- The crusty base for the quiche sandwich is ready.
Ingredients for the filling
- 6 ounces smoked salmon
- 3.5 ounces smoked bacon
- 3 eggs
- 3 cooked potatoes
- Fresh cream
- 1 teaspoon nutmeg powder
- 1 tablespoon chopped dill leaves
- 4 cooked potatoes
- Salt
- Black pepper
- Green lettuce leaves
Method
- Take the baked pastry and fill it chopped salmon, chopped bacon and potato pieces. Arrange these well within the space.
- Take a bowl and break the eggs in it. Beat them well. Then add nutmeg powder, fresh cream and dill leaves.
- Blend the mixture well. Add salt and pepper.
- Pour this mixture in the quiche. Bake the mixture for about 40 minutes. Let it cool once taken out.
- Take a serving bowl and place some lettuce leaves. Place the cooled quiche in it.
- You can cut this quiche into 4 to 6 equal pieces just like a pizza.
- Now your quiche sandwich is ready to eat.
Roasted red pepper corn bread:
Ingredients-
- 1 large red bell paper
- 2 cups sweet corn
- 1/3 cup sugar
- 1.5 cups buttermilk
- 2 eggs
- 1 cup flour
- ½ cup soft unsalted butter
- 4 teaspoons baking powder
- 1 teaspoon salt
Method-
- Preheat the oven to 400 degrees. Melt the butter in a pan.
- Slice the red pepper and roast it in a pan till it chars. You could even grill the peppers till they turn black.
- Once the peppers are grilled cover the pan with a lid and let steam be released. This would release the skins of bell peppers. Peel them off.
- Take a bowl and add the flour, sugar, baking powder, salt, and corn. The corn should be blended. Blend this mixture well.
- Beat the eggs in a bowl. Add these beaten eggs, buttermilk, and butter to this mixture. Mix well. Add the bell peppers.
- Cut this dough into small shapes of your choice. Take them on a greased baking sheet.
- Bake these for about 20 minutes. Let them cool a little.
- Your red pepper corn bread is ready.
