Bridal Shower Food : Quick and Easy Vegetable Soup
Ingredients
- 1 ½ pints of stock or water
- 12 oz mixed vegetables of your choice (diced)
- Chopped parsley
- Salt and pepper to season
- A little butter
Procedure
Begin by melting the butter in a large pan, then add the diced
vegetables. Stir so that the vegetables are well coated with the butter, and then
cook very gently for five to ten minutes stirring occasionally. It is important
to allow the vegetables to absorb the butter and not to brown them. Then add the
stock or water and gently simmer for approximately half an hour. Next season with
salt and pepper.
Then press the soup through a sieve or pure;e in
a blender. Return the soup to the pan and reheat.
Serve the Vegetable soup and sprinkle with chopped parsley.
