Bridal Shower Food : Watercress Soup
Ingredients
- 2 bunches of watercress (chopped)
- 1lb potatoes
- 1 pint of stock
- 1 pint of milk
- 1 teaspoon of butter
- Salt and pepper to season
Procedure
Begin by peeling, washing and chopping the potatoes. Next put
the potatoes in a large pan and add the stock, bring to the boil and then simmer
until the potatoes are tender. Then remove the pan from the heat and with a wooden
spoon, mash the potatoes and the stock together.
Now add the milk, margarine and seasoning. Return the pan to the heat and re-heat the soup.
Just before serving add the chopped watercress.
